Foolproof Thanksgiving Pumpkin Bread
Cooking together during the holidays can become a lovely family tradition, so why not start early? Here’s an easy recipe to help you get started — and even the littlest family members can help!
You will need:
- ½ cup of canola or coconut oil
- 1½ cups sugar
- 2 large eggs
- 1 cup of pure pumpkin puree (not pumpkin pie filling)
- ⅓ cup of water
- 1¾ cups of all-purpose flour
- ¼ teaspoon of baking powder
- 1 teaspoon of baking soda
- Pinch of salt
- 2 tsp. pumpkin or apple pie spice mix (cinnamon works too)
- Loaf pan (9x5)
- OPTIONAL: chocolate chips or chopped nuts (½ cup)
- Preheat oven to 350 degrees. Have your child grease loaf pan.
- Combine sugar, oil, eggs, pumpkin puree and water in a mixing bowl. Take turns mixing and incorporating these wet ingredients together until you have a nice, even texture.
- Measure and add flour, baking powder, baking soda, spice mix and salt to the wet ingredients. Mix together by hand for about a minute until you have an even batter. (You can even count to 60 while you take turns stirring!) Be careful not to overmix, as this will result in a tougher bread.
- Pour the batter into the greased loaf pan. Bake for about an hour, or until a fork/skewer comes out clean. The top of the loaf should be golden brown.
- Allow the loaf to cool for about 10 minutes before serving.
- Allow your child to measure, “pinch” and stir, offering gentle instruction as needed.
- Taking turns doing tasks helps your child feel independent, while allowing you to supervise.
- Positive reinforcement for completing a task helps make cooking fun for everyone.
- Leave yourself plenty of time to finish this recipe — cooking with multiple generations involved can take a little longer!
